Teal For Me Please! (Nut-free, Dairy-free, and Egg-free Homemade Cupcakes)

May 22, 2014

If you don’t already now, over 15 million people in the USA have food allergies, one of them being me. (1 in 13 children). I have a severe allergy to all nuts and peanuts so allergy awareness is a big deal to me. It’s my life.
This year in my English 1 class, we had over four kids with the following food allergies:
1.) cinnamon
2.) tree nuts/ peanuts
3.) lactose
4.) fake strawberries
So, at the end of the year, our teacher allowed us to have a party as long as we meet everyone’s food needs and he didn’t have to do anything. Originally, I wasn’t going to bring anything until my mom found a recipe for dairy-free, nut-free, and egg- free chocolate cupcakes. And since it was food allergy awareness week, I decided to bake them and make their frosting teal. (Teal is the official color for food allergies.)

The party week super well, and everyone was overjoyed. (It was also good they were egg-free because one girl was vegan also.)
Since I love these cupcakes so much I decided to share them with you!
All you need is:
1 1/2 cup of flour
1 cup of sugar
1/4 cup cocoa powder
1/2 tsp salt
1 tsp backing soda
1 tsp vinegar
1 tsp vanilla
1/3 cup oil
1 cup of cold water
First heat you’re oven to 350. Then mix all the ingredients together and pour into greased cupcake tin. The time varies from 15 to 30 minutes. (Mine take about 20.) If you wish to make double the amount then double the ingredients.

This is what they look like without icing.

Let’s help spread food allergy awareness! Pass this message on!!! #TealTakeover
